Succinic acid is a natural acid that exists in small quantities within most fruits and vegetables. Succinic acid is an odorless, colorless crystal that has a slightly bitter and acidic taste and is soluble in water. In food products, succinic acid is used as an acidity regulator, preservative, and a flavor enhancer.
